I’m always looking for recipe ideas so I’m always sure to check out the USA Weekend that gets dropped off at my house every Sunday. Besides the McDonald’s coupon that I found, there was also an article about 600 calorie meals straight from the grill. I had completely forgotten about grilling season this spring with all the rain we have had in Ohio.
Anyway, this article had a delicious looking recipe for pork tenderloin. This article also mentioned that grilling has some great health benefits. It adds some great full fire flavor without adding any calories and fat. The pork tenderloin is just as lean as a boneless skinless chicken breast and the Chili Rubbed Grilled Pork Tenderloin recipe is just 160 calories a serving.
This recipe is on my to-do list… that is as soon as the rain stops! Happy grilling season everyone!

I stumbled upon the 2-for-1 Stuffed Pork Tenderloin recipe at Emily Bites and I had to share it! I looks delicious and you can personalize the recipe based on what you have available in your kitchen. I know what’s going to be on the menu for my next special occasion like Mother’s Day, a birthday, or the celebration meal after we have a full week above 60 degrees! (Obviously, I can’t wait for spring to officially come! Is the snow done yet?)
I love Emily’s blog because all of her recipes follow her goals to make food that is healthy, delicious, and still easy to prepare. I feel like I can make almost all of her recipes at home and they are all based on ingredients that I have in my kitchen or have seen hundreds of times in the grocery store. Plus they all look fantastic and you have to love that!!
