The Porktastic Nine
There are thousands of pork recipes out there. Really, we’re not joking. We find that we can carry about nine comfortably in our brain’s knapsack. Nine. We like nine. We think you will too.
During the next couple of weeks, we will be building our infamous list of nine Porktastic recipes. We’ll be sharing outrageously delicious pork creations featuring a variety of cuts and mouth-watering photos. Once the P-Nine are revealed, you will have the opportunity to influence this list going forward. Stay tuned for details.
9. Skewer This: The Pork Kebab Trifecta. Pork. Bacon. Summer sausage. All grilled to perfection on a stick. Does life get any better than this?
8. Pork [and apple] Pie á la Mode. Why should apples have all the crust and ice cream? We’ve decided they shouldn’t. This is a lean, mean protein pie that is meal worthy and snackalicously good.
7. (Nearly) Intoxicating Pulled Pork Sandwiches. So, we’ve adapted this slow cooker recipe and call it “nearly” intoxicating because we employ root beer instead of the real deal. When this magnificent concoction is shreddin’ ready, trust us when we say we think you’ll be ready to celebrate with a cold one.
6. Gourmet Barbecue Pork Pizza. Pork and Pizza. What could be more natural? Think about it: pizza provides the perfect platform for 100 percent pork pepperoni, succulent squares of ham, mounds of spicy sausage, crispy crumbled bacon, tastefully applied prosciutto…
5. Pineapple & Mango Salsa Pork Wraps. Fruit Pie the Magician could wave a wand and make things appear. Sadly, you don’t have such power when it comes to food prep. This recipe is easy to prepare and can be modified to use shredded pork, pork loin or pork chop leftovers.
4. Italian Pork Hoagie. Hoagie, sub, grinder, zep, po’boy, torpedo… whatever it’s hailed by, Number Four on our Porktastic Nine is sure to delight even the most finicky of eaters…
3. Southwest Grilled Pork Tenderloin. New year, same resolution: eat more pig without looking like one. Since this recipe has lots of lean protein and only 151 calories, you may actually be able to keep that resolution this year.
Bleu-Cheese Filled Pork Loin
We love this slice of heaven so much that we failed to get a nice snapshot before it was consumed. If your version comes out as handsome as ours did, send your photo along and we’ll post it. There’s no guarantee we’ll be able to control our appetites on this one long enough for it to say “cheese.”
- 1 1/2 to 2 lbs pork loin
- 1/2 cup soft butter
- at least 4 tbsp bleu cheese
- 1 egg yolk
- 2 tbsp minced parsley
- 1/2 tsp dried thyme
- 1 garlic clove, minced or chopped
- cooking string
Preheat oven to 350 degrees. With a sharp knife, cut pork loin lengthwise, but NOT all the way through. Set aside.
In a blender, (or just mix well by hand) blend together butter, cheese, egg yolk, and spices until smooth. Spread in the center of tenderloin.
Tie meat securely with cooking string; brush surface with a bit of butter or oil; Set on rack in baking pan.
Bake for about 40 to 50 minutes or until meat is cooked through and tender… remove string, slice and serve!
