Our family (myself, my wife and our eldest son) spent eighteen months apprenticing with Cole Ward to learn the craft of commercial meat cutting so that we can open our own on-farm butcher shop which we&#039;re building now. Learning from Cole was a privilege. He is a not just a master butcher but a great teacher. We started out the first week just watching him, then progressed to us doing the cutting and very soon he was giving us the meat orders and we were able to do all the cuts. Each day he would teach us a few new cuts.

The next best thing to apprenticing with Cole is one of his workshops and this video. If you want to butcher your own meat, or are even just curious, get it.</description>
