<p>Just when we thought that trotters have a bad rep, The Flying Pig Marathon in Cincinnati proves us wrong. They have taken great strides in reducing their marathon’s carbon footprint. The city that used to be Porkopolis has moved by leaps and bounds to reduce, recycle, and reuse.<br />
They were able to have online registration and promotions which reduced a large amount of paper used by the Marathon. Isn’t it great that technology helps us improve the world in which we live.</p>
<p>Want to know more about how The Flying Pig became greener. Here are the deTails:</p>
<ul>
<li>Replaced many race-day cups with versions that can be composted</li>
<li>Created virtual goodie bags for an anticipated 30,000 entrants in the combined events.</li>
<li>Water bottles, aluminum cans, plastic jugs, cardboard, paper and unused bibs will be recycled.</li>
<li>Organizations and individuals will reuse the Vinyl banners, Mylar warmers, unused race medals and unused race ribbons will be reused.</li>

<p>I’m planning on completing a 5k and a 10k this year and I hopefully see a half marathon in 2012. I love the fact that races are becoming more environmentally friendly and especially races that are pig themed! If you are looking at races, then take a closer look at pork. It’s a great lean protein that helps fuel me through training and race days!</p>

Of course, it has been recently celebrated at Denny’s with the creation of a BBBLT in their <a href="http://porktastic.com/2011/03/29/bacon-update-baconalia-at-denny%e2%80%99s/" target="_blank">Baconalia</a> event.</p>

If you were impressed by the BBBLT, you haven’t seen anything yet. During the Spring Show this year in Kansas City, the <a href="http://blogs.pitch.com/fatcity/2011/04/world_record_blt_attempt_set_f.php" target="_blank">world record for the largest BLT </a>will be attempted. The Associated Wholesale Grocers will be attempting to make a 200 foot sandwich. We wait in anticipation for April 27th as one of our greatest wishes will come true. Well, besides an official Bacon Day Parade on <a href="http://porktastic.com/2009/09/03/game-plan-for-international-bacon-day-9-5-09/" target="_blank">September 5th</a>.</p>

			<content:encoded><![CDATA[<p></p><p>I had heard of Bacon Camp and had been interested in the past, but just cleared my schedule and gathered the gusto to attend in 2010.  Held in the <a href="http://www.dispatchkitchen.com/live/content/index.html" target="_blank">Dispatch Kitchen </a>upstairs in the <a href="http://www.northmarket.com/" target="_blank">North Market </a> a sold out crowd of 200 was reported.  So, it turns out there are more people out there like us at the <a href="www.ohiopork.org" target="_blank">pork council </a>that are willing to dedicate three hours of their life to a pork specific camp.</p>
<p>What I failed to do ahead of time was thoroughly read the details of exactly what would happen at Bacon Camp.  If I had done so, I would’ve chosen one or two of my fabulous bacon recipes and entered the cooking competition. </p>

<p>I would’ve clearly been in the bacon only divisions though, I didn’t even try the facon.  Had I read the decorations I probably would’ve taken some of the art from the walls of the bacon room in my house and entered them in the art competition.  I definitely wouldn’t have gone expecting to eat random people’s bacon dishes (many of which were served cold even though they should’ve been hot).  And I wouldn’t have expected educational workshops and such.  I’ll have to admit my favorite two entries were the chocolate cupcakes (with a little bacon sprinkled on top) and the freshly prepared <a href="http://www.sugardale.com/Bacon.aspx" target="_blank">Sugardale bacon</a>.  Sugardale was a major sponsor of the event, thank goodness I got to eat warm bacon!</p>

<p>There you go!  That’s a picture of our pork stand!  (<em>I could never catch someone dropping our plastic knives in front of the stand.  I just wanted to show them the trash can 10 feet behind them!!) </em>Can’t you just feel the excitement and enthusiasm from the opportunity to provide the world with delicious pork!</p>
<p>The cashiers and I recorded the most asked questions from the fair this year.</p>
<p><strong><em>What are pig wings?</em></strong></p>
<p>One of the cashiers recorded the amount of times she got asked this question and it resulted in about 30 in one day.  This also happened to be the slowest day at the fair.  I’ll be sharing with you the inside scoop of the pig wings later.</p>
<p><strong><em>Where can we buy that shirt</em></strong>?</p>
<p>We were all wearing some pretty sweet shirts.  Again, something I’ll be sharing later!</p>
<p><strong><em>How did you cook the pork loin sandwich to make it so delicious?</em></strong></p>
<p>Another question I’ll be answering but trust me it’s all in the temperature!</p>
<p><strong><em>Can I have a cheeseburger?</em></strong></p>
<p>I think the giant word ‘Pork’ on the banner should have been a little hint to the answer to that question…</p>

			<content:encoded><![CDATA[<p></p><p>I know, I know… it’s amazing that they don’t have cards, songs, and most important to any holiday, a JCPenney sale, to mark this momentous occasion.</p>
<p>Some hot dog trivia from the National Hog Dog and Sausage Council:</p>
<ol>
<li>Americans eat more hot dogs on the 4<sup>th</sup> of July than any other day.  Around 155 million of them!</li>
<li>Los Angeles is the #1 hot dog eating city!</li>
<li>Sausage is one of the oldest forms of processed foods.  It was mentioned in Homer’s Odyssey in the 9<sup>th</sup> century!</li>
<li>The name ‘hot dog’ probably came from a dachshund dog that the German’s brought with them along with the idea of serving sausage on a bun.</li>
</ol>
<p>Here are a few ways to celebrate this month the Porktastic way:</p>
<p>1.  Take a bite out of this monstrosity- a foot long hot dog, loaded with cheese, chili, and bacon.  Nothing like a little pork on pork!</p>

			<content:encoded><![CDATA[<p></p><p>Sometimes you just have to face certain realities in life.  I will never be able to win a world record for the fastest furniture (currently held by a 92 mph sofa… gives the phrase couch potato a whole new meaning), the greatest distance walked with a milk bottle balanced on my head, or the heaviest weight dangled from a swallowed sword (yes that one actually exists).  These have all been painful but necessary realizations.</p>
<p>Still, I think I would be able to help Brat Fest achieve its world record because all I would have to do is eat sausage.  Could anything be simpler!</p>

<p>Brat Fest is on Memorial Day weekend at Madison, Wisconsin.  This year they managed to sell 209,375 brats by 5 p.m. on Monday, May 31<sup>st</sup>.  Unfortunately I heard about this festival a little too late or they could have made it 209,380 or possibly 209,390…</p>
<p>This festival consumed about 20 miles of sausages if they were laid end to end, 300 gallons of Heinz ketchup, and 176 gallons of mustard.  The best part about this festival is that the profits go to charities and this festival has donated $855,723 since it began.  I love eating for a cause!</p>

<p><strong><em>Grilled Brats with Onion Relish</em></strong></p>
<p>Ingredients:</p>
<p>4 bratwurst, uncooked<br />
2 slices bacon, cooked and crumbled<br />
1 tablespoon olive oil<br />
1 large onion, sliced<br />
1 12-ounce can beer<br />
1 teaspoon brown sugar, firmly packed<br />
1/4 cup bread and butter pickles<br />
1 teaspoon thyme leaves, chopped</p>
<p><em>Cooking Directions:</em></p>
<p>In large deep skillet, heat olive oil over medium high heat and add onion. Sauté, stirring frequently, until very soft, about 8-10 minutes. Add beer and brown sugar and cook over medium high heat until liquid evaporates, about 10 minutes, stirring occasionally.</p>
<p>Continue cooking until the onion turns a golden brown, stirring constantly. Stir in bacon, pickles and thyme. Season with salt and pepper.</p>
<p>Prepare a medium hot fire in grill. Grill bratwurst directly over heat, turning, until evenly browned, about 5-7 minutes and to an internal temperature of 160 degrees F. Remove from grill and top with onion relish.</p>
<p>Makes 4 servings</p>
<p><em>Note: The onion relish can be made ahead and reheated. Store it in the refrigerator. Serve it warm or at room temperature</em></p>

It is bigger than Thanksgiving and Christmas and New Year’s and the Fourth of July combined. It is a day to honor the reason there can be delicious bacon and pork chops and swine inspired doo-dads and even a nation of Porktastic. My fellow Porktasticans prepare yourselves because today is <strong>National Pig Day</strong>.</p>

<p>My friends, we will be grilling, baking and slow roasting all of our favorite forms of pork throughout the day, not to mention watching our favorite famous pigs like Babe, Porky, Gordy and Miss Piggy. So come party with us! We’ll be easy to spot since we’ll be the ones decked out head-to-toe in true pig style &#8211; nose, ears and of course curly-q tail.</p>
<p>But, if for some crazy reason your boss won’t let you off to celebrate this holiday of holidays, we have a few ideas to help you take the party to work with you:</p>

<li>Grill up some pork loin chops and bring enough to share with your coworkers, remembering they want to be home celebrating just as much as you.</li>
<li>Get a pig piñata filled with <a href="http://www.thinkgeek.com/caffeine/wacky-candy/b97f/" target="_blank">bacon candy</a>.</li>
<li>Wear your favorite pig inspired tee underneath a button-up dress shirt. When everyone complains about missing Pig Day rip your top shirt off like Clark Kent and set up a completely awesome celebration of pigs and pork.</li>

This time of new beginnings and fresh starts is celebrated by the Chinese and pork lovers all over the world.</p>

The ancient Chinese loved pork with a passion that could rival our own. They hated to be separated from fresh pork so much that when they died, they were sometimes accompanied to the grave with their pigs. This Porktastic infatuation hasn’t gone away, and today China is the #1 producer and consumer of fresh pork in the world.</p>
