Recipes for Pork Month!

I can’t believe that October is over half way done!  You only have a few more days to print out the $2 coupon from the Ohio Pork Producers Council for any fresh pork product. 

If you don’t know what to make with that pork you bought using the coupon, take a look at these recipes.  They taste delicious and are a great way to celebrate Pork Month!

Guest Post: Quick Pork Fajitas

Hello Porktastic! We are happy to have this opportunity to be guest bloggers for the day! We are Ann, Carrie, Kyra and Tracy, and we hail from the Columbus State dietetics program. We had the chance to hang out with Jennifer for the day, and get a real insight on the amazing other white meat. We learned so much and even came out with an amazing recipe with you guessed it, pork as the main ingredient! This recipe is so quick and easy, we recommend making it on a Sunday night so you’ll have a quick and easy recipe to whip up after your long Monday work day…did we mention there are only four ingredients!? We are all for a no fuss dinner that the whole family will enjoy!

Serves 4:

1 lb pork

 1/2 green pepper

 1/2 onion

 3 tbsp fajita dressing

4-6 flour tortillas, warmed

Cut the onions and peppers into very thin slices (much like any restaurant would) see here:

Put the peppers and onions into a zip lock bag. Next, cut the pork into perfect thin fajita slices.

Put the pork slices in with the peppers and onions and add the marinade:

Feel free to add your own special marinade, or anything of the like.

Fajita seasoning!

Put the mix into the refrigerator overnight and when you’re ready to eat dinner the following day, put all of the ingredients into a sauté pan and cook until the pork is white (we say about 5 minutes).
